The variety of Olivo Quercetano apparently derives from the adaptation to the microclimate of Versilia of olive trees introduced in the hilly areas even before the Roman era. The plants have a low to medium vigor, with hanging branches and dense foliage and thick; the leaves have the upper surface of deep green and elliptic shape. The fruits are ellipsoidal with the diameter positioned at the center, the olives are generally small in size, the peel presents small and numerous lenticels. The cultivar due to its hardiness has no special requirements in fertilization and, given the small size of olives, has the distinction of being unappetizing to the attacks of “olives fly”. The gathering takes place during October-December, adopting the method of beating with the aid of networks and stairs. The olives quercetane are consumed only for family use. Most goes to the mills for the production of oil. The area concerned in the production of this cultivar covers about 100 hectares.
