Recipes for a warm Halloween: Farrotto of yellow pumpkin

We combine traditional folklore with this recipe based on pumpkin halloween prepared to decorate a delicious variation of the traditional “Farrotto” of Lucca.

Farrotto of yellow pumpkin
 
What is necessary:
200 g. spelt beans
¼ pumpkin ripe and mealy
½ cup white wine
vegetable broth
cheese “Grana”
olive oil, salt and pepper
 

How you doing:
Spelt seeds before cooking, should be washed and cleaned of all impurities (dust, flakes, grains failures etc.).
Fry the onion slowly in three tablespoons of olive oil and a tablespoon of water until it is soft and well browned.
Put the pumpkin into chunks and let it flavor. Add a ladle of hot water and cook slowly until cooked pumpkin.
Season slowly the whole thing, put the wine and let it evaporate a little continuing cooking very slowly.
Add the spelt and gradually the hot broth as in a normal risotto, until cooked, then add the cheese creaming, adjust the salt and pepper.
