The pine nut, off-white color, has an oblong shape and is contained in a shell covered with purplish black powder; comes from domestic pine, a typical plant of all the countries bordering the Mediterranean basin and was used since the times of the Romans in the kitchen and in medicine. The pine nut of Migliarino San Rossore is certified as organic. The harvest of pine is done when they are still closed, then they are left in the sun until they hatch naturally. After the separation between the pine and pine nuts are cleaned, shelled and select pine nuts which are then dried. The product is available all year round because, once dried, it is good for conservation. The organic certification guarantees a good market even outside Tuscany. The annual production amounts to about 2,000 q of dried pine nuts. The pine nuts can be used as a garnish for many local sweets eg. the “torta co’ becchi” and chestnut cake or as an ingredient for the “pesto”.
