The bean schiaccione di Pietrasanta is a variety with indeterminate growth. The pod of green–white color, sometimes with some mottle, has a diameter of about 2.5 -3 cm and a length of 14-16 cm. The seed of white color, has arather fine skin and is quite large, about 2.5 cm; assumes a kidney-shapedrounded and is crushed. The seeds, once cooked, have a delicate flavor anddo not tend to chalk. In the past it was sown in between crops of corn, which was used as a guardian. The delicacy of this bean advised to prepare boiledof season with a good EVO oil. The economic value and the currentproduction potential are good: we can assume an area of 4-5 has investedannually.
